  • My Mom's egg in a basket recipe

    In Brians "Remember, remember" Nov. 5th thread the subject of eggs in a basket came up. Here's my recipe for making them.

    My late dad said that eggs in a basket were common in the Pennsylvania farm area where he grew up, and that was before WW-I.

    My mother made hers with a thick slice of bread hollowed out with a cookie cutter (I use Texas Toast style bread, which is ~1" thick).

    Pics below.

    Butter one side then melt some butter in the pan, place the unbuttered side down then crack the egg in the hole. Sprinkle a bit of cinnamon, salt & pepper on each side while cooking.

    She would cook hers just enough to brown the bread, leaving the yoke 'sunny side up' style. Eat with a fork, dipping the bread in the yoke as you go.

    Cut hole in 1" thick bread slice (this is Texas Toast)


    Butter heated pan and 1 side of bread, place in pan add egg & spices


    Cook until brown on 1 side then flip & cook side 2. MMMMmmmmm....looks good

      Me hungry now. Looks good. I normally have my eggs poached. Far nicer than frying.
