        First that pic is not the one we fixed, I had to look one up for posting. Ours was served and gone at a family gathering last week so fast you wouldn't believe it. Still it's 99% identical.

        Full layering

        Turkey
        Cornbread stuffing
        Duck
        Chestnut- stoneground wheat stuffing
        Chicken
        Hot sausage stuffing
        Guinea hen
        Shitaki mushroom stuffing
        Squab
        Oyster stuffing
        Quail

        Another variant is one Chef Paul Prudhomme prepares where turkey isn't the outer layer; Ostrich is.

          Quail
